Crispy roasted potatoes seasoned with fresh lemon and are made throughout Greece.
6 large potatoes, washed and peeled
1 recipe ladolemono
2 tablespoons fresh, chopped herbs, such as parsley, oregano, or rosemary.
Preheat oven to 400 degrees Fahrenheit. Spray a 9 x 13 baking dish with cooking spray or brush with a thick layer of olive oil. Blot the potatoes with paper towels after washing. Cut each potato into eighths and add it to a medium bowl.
Place the pan in the center of the oven. Bake until potatoes are crispy, which should take around 45 minutes. Garnish with herbs just before serving.
